Beef Burgers
Don't press them down with the spatula. That's the juice going into the pan.
Ingredients
- 600 g beef mince
- 4 burger buns
- 4 slices of cheese
- 1 brown onion, sliced into rings
- 1 tomato, sliced
- A few handfuls of salad mix
- Pickle slices
- 2 tbsp tomato sauce
- 2 tbsp mayonnaise
- 1 tbsp olive oil
- Salt and pepper
Method
- Divide the mince into four and shape them wider than the buns — they shrink. Press a dent into the middle of each so they don't dome up.
- Season the outside just before they hit the pan. Salt in the mix makes the texture springy rather than tender.
- Fry in the oil over high heat, 3–4 minutes a side, and only turn them once. Cheese on in the last minute with a lid over the pan.
- Toast the cut side of the buns in the same pan.
- Sauce on both halves, then salad, patty, tomato, onion, pickle.
