Don't press them down with the spatula. That's the juice going into the pan.

Ingredients

  • 600 g beef mince
  • 4 burger buns
  • 4 slices of cheese
  • 1 brown onion, sliced into rings
  • 1 tomato, sliced
  • A few handfuls of salad mix
  • Pickle slices
  • 2 tbsp tomato sauce
  • 2 tbsp mayonnaise
  • 1 tbsp olive oil
  • Salt and pepper

Method

  1. Divide the mince into four and shape them wider than the buns — they shrink. Press a dent into the middle of each so they don't dome up.
  2. Season the outside just before they hit the pan. Salt in the mix makes the texture springy rather than tender.
  3. Fry in the oil over high heat, 3–4 minutes a side, and only turn them once. Cheese on in the last minute with a lid over the pan.
  4. Toast the cut side of the buns in the same pan.
  5. Sauce on both halves, then salad, patty, tomato, onion, pickle.
