Homemade Pizza
The bases are shop-bought on purpose. Make your own dough on a day you've got two hours.
Ingredients
- 2 pizza bases
- 150 ml passata
- 200 g grated mozzarella
- 60 g pepperoni, sliced
- A few basil leaves
- 1 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper
Method
- Heat the oven as hot as it goes, with a tray or a stone already in there. Domestic ovens are much cooler than a pizza oven, so every degree counts.
- Season the passata with salt and the oregano and spread it thinly — a spoonful per base, no more. Too much sauce is the usual reason a home pizza goes soggy.
- Cheese, then toppings, then a drizzle of oil. Leave a clear centimetre around the edge.
- Slide it onto the hot tray and bake 8–12 minutes, until the cheese is blistered in a few places and the base lifts stiffly off the tray.
- Basil after it comes out, not before — it burns in that heat.
