Pancakes

Makes about a dozen. The first one is always the worst one; that's the pan finding its temperature.

Ingredients

  • 250 g plain flour
  • 2 tsp baking powder
  • 30 g caster sugar
  • 2 eggs
  • 350 ml milk
  • 40 g butter, melted, plus more for the pan
  • 1 tsp vanilla
  • Maple syrup, to serve
  • A pinch of salt

Method

  1. Whisk the flour, baking powder, sugar and salt in a bowl. Beat the eggs, milk, melted butter and vanilla in a jug.
  2. Pour the wet into the dry and stir just until there's no dry flour left. Lumps are fine and stirring them out makes the pancakes tough.
  3. Let the batter sit for 10 minutes if you can. It thickens and the pancakes rise better for it.
  4. A little butter in a non-stick pan over medium heat, then a small ladle of batter per pancake. Turn when the bubbles on top stop closing over — about 2 minutes.
  5. Another minute on the other side. Keep them warm in a low oven while you do the rest.
