Sausage & Vegetable Tray Bake
The lowest-effort dinner in the book: one tray, one wash-up.
Ingredients
- 8 thick sausages
- 800 g potatoes, in 3 cm chunks
- 1 red capsicum, in chunks
- 1 red onion, in wedges
- 2 tomatoes, halved
- 2 tbsp olive oil
- A few sprigs of rosemary
- 1 tsp paprika
- Salt and pepper
Method
- Heat the oven to 210°C and put the tray in to heat with it. Cold tray, soggy potatoes.
- Toss the potatoes with half the oil, the paprika and plenty of salt, and give them a 15-minute head start — they take longer than everything else.
- Add the sausages, capsicum, onion, tomatoes, the rest of the oil and the rosemary. Shake the tray rather than stirring it.
- Back in for 30–35 minutes, turning the sausages once, until everything has brown edges.
- If the sausages are done and the potatoes aren't, take the sausages out and give the tray another 10 minutes. Nothing is lost.
