Pisco Sour

Ingredients

• 60 ml pisco
• 25 ml lime juice
• 20 ml sugar syrup
• 15 ml egg white
• 3 dashes Angostura bitters
• Ice

Method

1. Dry shake everything but the bitters — no ice — for 10 seconds.
2. Add ice and shake hard for another 12 seconds.
3. Strain into a chilled coupe and let the foam settle for a moment before dotting the bitters on top.
